Meat, Egg, Dairy, and Nut Consumption

I've been doing a series based on the USDA's numbers on historical food consumption in America. These numbers aren't perfect. They probably don't capture what home gardeners grow and eat, I would guess. But they are based on total U.S. production minus exports and waste plus imports.

Meat Consumption Over Time

Daily Per Capita Meat Consumption
(ounces of cooked meat, poultry, and fish)
1970: 4.73
1980: 4.76
1990: 4.86
2000: 5.18
2006: 5.27

Over time, our red meat consumption has declined while poultry consumption rose significantly. Fish consumption went up too, but it still constitutes less than 10% of the dead animals eaten in America.

I would have put this in servings but it turns out eggs vary in size and calories so I'm not sure how to correctly state it in servings. A large egg has 72 calories.

We're switching from whole to reduced fat and fat free milk, but we're getting milk fat in our diets anyway from increased cheese consumption.

We're eating so much more cheese these days that even though a smaller percent of it is cheddar, we are eating MORE cheddar overall. But the growth in cheddar consumption is NOTHING compared to Mozzarella! Mozzarella consumption is now roughly equal to cheddar but its growth over time is enormously higher.

*I have NO idea what the USDA means by "Daily per capita ounces of cooked meat equivalents" but that is what they measured nut consumption in

Wow, any explanation for the rise in cheese consumption?

Is it all pizza and fast food burgers / tacos / etc...?

The mozzarella numbers would lead me to believe that pizza is the culprit...but do Pizza Hut or any of those other places actually use real cheese?

Dairy, egg, meat, and veggie consumption has all increased since the '70s.  No wonder we're so fat.

Meat/Eggs/Nuts (which I disagree with as a "category") increased 10.3% 1970 to 2006
Dairy: +0.3%
Fruits: +24.4%
Vegetables: +19.3%
Flour/cereal products: +43.6%
Added fats: 55.1%
Added sugars: 16.6%

It would be interesting to compare these consumption charts (4.00 / 1)
against cascade events. Egg consumption, for instance, drops when "cholesterol in eggs" is all the news, and is only now slowly recovering with the idea of egg-yolks being rich in omega-3 faddy acids.

I eat farm eggs, living in an area where there are lots of small egg producers. One of the nicest parts of our local diet. If only local chickens were as easy to buy as local eggs!
