Vegan cooking for non vegans # 29 Dani's 21st Bdy Dinner

This post is a little departure from my usual weekly post because it will include the entire menu. There are 2 dishes that don't have recipes; the Tahina cake from my friend Aliza's http://www.alizagreen.com/cate... Starting with ingredients Book (Aliza is also one of my clients as I have become a WordPress Developer:)The cake is Dani's favorite and it is totally vegan and delicious. Shameless plug for this wonderful book.
I'm also not including my recipe for Italian Bread for two reasons. It's taken months to perfect and it's a little complicated. Also I don't want to encroach on Something the Dog Saids weekly bread posts.I was planning to throw a big 21st party, but both of us are stressed out and so I decided to cook dinner for the 2 of us tonight.

Menu

Italian Bread w/olive oil dip for Dani and the Sagnola Blue Cheese from Trader Joes ( my favorite blue )for me. Dani told me this bread is the closet to bread she ate in Tuscany.

Salad
Lemon Pappardelle with fennel and roasted peppers
Lee's Seitan
Tahini Cake
Wine- 2 bottles because Dani likes Red and I  don't.Except for special occasions I never spend more than 10 bucks a bottle. Our State Stores are UNIONIZED and now decent after shitty prices and bad selections for years.Of course our newly elected Republican Governor wants to privitize our State Stores and bust the Unions.The only nice thing I can say about Corbett is he's not a fat f**k like Chris Christie.

Red Chianti Gabbiano I knew nothing about reds and was recommended to me by the nice person at the State Store.These nice people who know something about wines are soon to be replaced by Corbett's know nothing friends.
Pinot Grigio Mezzacorona

Lemon Papparedelle w/roasted veggies I buy the package from Trader Joes. It has eggs but Dani makes an exception.

2 fennel bulbs sliced
one tomato
1/2 red onion
4 garlic cloves
2-3 roasted peppers

I put all of the above on a oven tray with olive oil and roasted for about 30 minutes at 350. In a pan with oil olive oil I put 2--3 roasted peppers sliced and add all of the above and saute for about 5 minutes. Add a handful of Italian parsley and cooked pasta and toss.

Lee's Seitan

Soak some dried Shitake mushrooms SAVE LIQUID.

In a pan heat olive oil along with garlic, and fresh Rosemary. Add shitakes and cook for 5 minutes. Add one  8 ounce container of Seitan; I use Ray's because he's local and the food coop  sells. Sear the Seitan for about 5 minutes DON'T cook too long as it burns. Take Seitan out and add
the mushroom soaking solution and about a half a cup of wine. I'm using the above red. Reduce a little and add the Seitan back. You may have to add a little more liquid ( you could add more wine) Cook for about 20 minutes. If you wanted you could thicken the sauce with a little cornstarch to be more gravy like.

Happy birthday to Dani!

I remember my 21st birthday.  It was a Thursday, this was the major news that day.  

The Mets made the World Series that year.  Began nine days later.  Let's not talk about how that one ended.  The Devils were defending Stanley Cup Champions and would repeat as Eastern Conference Champions, and the Giants were on their way to another Super Bowl.  Yeesh, all three would lose in the championship game / series later that year.

Rutgers football went winless in the Big East.  We even lost to Temple that year, which was Temple's only conference win of the year.

I worked, then I bought my first legal six-pack on the way home.  Came back home, drank, ate dinner, went to sleep and then went to work early the next morning.

Ah, to have a normal routine once again!

This dinner sounds divine, Lee. And you and Dani celebrating what is a milestone event for both you with a quiet dinner strikes me as the sweetest thing I have heard in a long time.

the recipe for Seitan could easily by used for chicken or meat. I added some balsamic vinegar at the end

Btw, feel free to post your bread recipe if you'd like.  You wouldn't be stepping on any toes, and there's no such thing as too much good bread in this world!

but you really have to be a passionate baker like me to make good Italian bread. That and a baking stone ( or unglazed quarry tiles)
