| Dani's my daughter. She's became a vegetarian at age 9 because" God didn't want her to eat anything with a face". Went off the vegetarian band wagon at 10 due to chicken wings at a bbq. Back to being a vegetarian at 12, then vegan at age 14.She's been a vegan ever since (she's almost 21)
She loves to cook We have our Thanksgiving rituals. My sister and I make the Turkey. Dani the stuffing.And at noon we all listen to Alice's Restaurant on the radio in the kitchen.I'm a little teary eyed right now because this because is the first Thanksgiving she won't be here.She's taken the semester off to travel the world.Right now she's in Luxor, then off to India. |

| You COULD leave out the Seitan, but it adds protein and Dani loves it.
3 cups cooked short grain organic brown rice
1 container of Seitan
8 ounces dates chopped
8 ounces organic apricots chopped
stalk of celery chopped fine
3-4 carrots chopped fine
1 big onion
fresh herbs...we still have fresh sage in the garden but you could use thyme or parsley
Earth balance (or something like that) or butter or olive oil.
in a big pan with whatever fat, saute onions til carmelized. Add celery and carrots. And cook all together til everything is soft. Add small chunks of the Seitan and cook together to meld the flavors. Add the chopped apricots and dates and cook til they slightly "melt".Add the chopped herbs and salt and pepper to taste. Serve as a side dish or cool and stuff in bird.. |
