Vegan cooking for non vegans # 15 Italian Quinoa Salad

I just rediscovered Quinoa. I bought a package of the red Qunioa at Trader Joes.

1 cup cooked quinoa (follow directions)
handful of sun dried tomatoes
garlic
small chopped onion
pitted olives
fresh parsley

saute garlic, onion. Add sliced sun dried tomatoes and chopped olives
Add to quinoa and toss. Salt and pepper to taste

does this keep in the fridge? I mean, will the quinoa get soggy? I'm looking for new things to cook bulk so I don't have to cook much during the week. During the week I need to be working not cooking, but a person still needs to eat.

Normal people scare me.... But not as much as I scare them.

well it kept for a few days (4.00 / 1)
without getting soggy..And you can always freeze (didn't try so I can't attest to the texture)I ate this cold or at room temp...

...a large bag full of red quinoa from the bulk bins at People's, it's been hanging around here for who knows how long.  I wonder if it's even good anymore?  Seriously, it's been sitting here for over a year.  Have no clue what to do with it, and I bought it on a whim.  Not a quinoa fan, never have been.  I don't know, maybe I should try this.  At least try something with it!

We always make vegan stuffing at Thanksgiving. Except for this year because my daughter the vegan is traveling and so I am not having Thanksgiving here  I was thinking that quinoa would make a great stuffing.

Next week I'll post the vegan stuffing recipe

I've tried quinoa and amaranth (4.00 / 1)
I liked the quinoa but not the amaranth grains, I love amaranth greens, cooked or raw. I bought sprouting amaranth seed a month or so ago, and after I got it planted I smacked myself in the forehead (typical italian heritage move). Why did I do that when I have amaranth growing all over the dad gummed garden that's ready to harvest for seed?????

Normal people scare me.... But not as much as I scare them.
