Vegan cooking for non vegans Vol #4 Mexican pesto and pizza

I used this recipe last night http://www.greatpartyrecipes.com/pizzadoughrecipes.html to make pizza. I don't know why but I never used bread flour before! It was AWESOME. In about 2 weeks I will be swimming in tomatoes from my garden But last night the only thing I had was cherry tomatoes from my fridge and some broccoli. AND fresh coriander. I don't grow any annual herbs like coriander. Its not worth it because it flowers so quickly.Anyway I did have coriander in the fridge

Coriander Pesto w/lime

ground almonds

garlic

bunch of fresh coriander

juice and zest of one lime

olive oil

 

grind almonds, and garlic together. Add washed and stemmed coriander to processor (OR mortar and pestle) process. Add olive oil and process. Add lime jiuce and zest. Process again. Salt to taste

 

spread on pizza dough. Last night I slightly cooked tomatoes,chopped broccoli and a red onion. I did add some cheese, but I have made this before for my daughter and used marinated tofu instead of cheese
