Cheap Healthy Food

Okay, no real recipe for curried potatoes and cauliflower: what to do when the craving hits and there are no Pakistani restaurants in your town?

Make it up.  Here is what I've been doing lately:

Youffraita :: Cheap Healthy Food
This is so pseudo- it's not even funny.  It's certainly not gourmet.  But I like it...and maybe some other Locavore readers will like it too.

Curried Cauliflower and Rice Pilaf

(with or w/out potatoes: I report, you decide, lol)

1 head cauliflower
1 large or 2 medium onions, sliced thinly lengthwise
at least 2 c. rice (I like medium-grain)
twice as much broth/stock as rice
curry powder
cumin seeds
red pepper flakes
black mustard seeds (optional)
turmeric (optional)
fresh ginger (peeled & diced or cut into tiny matchsticks)
fresh garlic, finely minced
small(ish) red potatoes, quartered or halved

Cut up the cauliflower into florets (halve them if they're still large); quarter or halve the potatoes so they're about the size of the cauliflower.

In a large skillet, saute the onion; add ginger, cumin seeds, pepper flakes and mustard seeds.

When seeds start to pop or to brown, add garlic & lower the flame.

Add rice & stir-fry until opaque.  

Add veggies, broth, curry powder & turmeric, cover & simmer until veggies & rice are done.

It's not a difficult recipe by any means, and it is very healthy.  However, you may like your veggies/rice cooked more/less than I do, so I would say: watch the pot carefully so you don't over- or under-cook it for your personal taste.

Ginger, garlic, and turmeric all have (as far as I know, anyway) anti-bacterial properties.  Very healthy foods.

Usually when I make this, I try to make enough so that I have at least one good meal per day at work.  If you, like me, don't mind eating the same thing for days in a row (b/c it means you don't have to cook after 10-hour shifts) then I would suggest 3-4 c. rice, one head cauliflower, and as many pounds of li'l red potatoes as your skillet or dutch oven can handle.  Adjust seasonings accordingly.

I know what I'm cooking this weekend. Especially if I'm able to get my bad molar pulled this week. Tasty soft food is what I'll be all about for a couple weeks....

I like cooking up a big batch of something, then eating the same thing several days in a row or a week at a time. Harold hates that, he won't eat even his favorite food more than a couple days in a row.

Regarding locavores as elitists - explain to me how supporting local business is elitist....
